Like the Command block, which is an amazing resource to the Elderton Estate, the Ashmead block has consistently produced small parcels of excellent quality fruit. The vineyard was almost destroyed in 1997 to make way for higher yielding vines, however the family made the decision to promote the vineyard to a higher destiny – thus the Ashmead.
The 2019 is the nineteenth release of this unparalleled wine, and is a superior example of Barossa Cabernet Sauvignon. Elderton is not unfamiliar with premium Cabernet, having won more than 8 trophies for this varietal including the 1993 Jimmy Watson Trophy.
Winemakers Comments | Whilst Cabernet Sauvignon is characterised by its small berries and petit bunches, 2019 took this to a new level. We experienced a dry lead into the ripening season followed by relentless sunny days and no rain to relieve the vines during the ripening phase. Harvest decisions for 2019 were based around the flavours in the developing berries balanced with a close eye on vine health. Our Ashmead Cabernet Sauvignon was hand harvested and fermented in open wax-lined concrete fermenters. We worked hard to balance the fruit in the tiny berries whilst not over-extracting the ever-present tannins so typical of Cabernet Sauvignon. The freshly pressed wine went straight to French oak for malolactic fermentation followed by a measured time for further maturation. – Jules and Brock |
