Fruit selected from the Clare Valley region was harvested in the cool of the night and gently pressed in order to maximise freshness and flavour in the juice. The juice was then cold settled and cool fermented in stainless steel with yeast strains selected to enhance the natural varietal characters. After a short period of time on yeast lees the wine was bottled to preserve freshness.
