Style:Â A limited-edition wine made from single vineyard fruit grown on our estate in the Pyrenees.
Tasting Notes:Â This is a wine of balance and complexity. With aromatics of lemon zest, brioche and faint oaky undertones, the aromas pair seamlessly with a palate that carries rich developed flavours right through to the finish. A soft chalky minerality, refined acid and a subtle use of oak further add to the structure and richness of the wine.
Region: Â Pyrenees, Victoria, Australia
Variety:Â Chardonnay 100%
Vintage:Â A dry growing season in 2020 led to naturally low yields across the vineyard.
Winemaking:Â This Chardonnay was left to ripen slowly in the eastern morning sun and harvested in the cool hours of the morning to retain the freshness and intensity of the fruit. Juice was then cold settled and run to barrel for fermentation.
The wine underwent partial malolactic fermentation in both new and 3-year-old oak. Left to age on lees for 8 months post fermentation, with regular batonnage to add creaminess and texture to the palate.
