The fruit was harvested in the cool of the night. The juice was promptly clarified then fermented at cool and steady temperatures. Light stirring on lees added complexity and weight to the palate, before an early fining and filtration to maintain freshness and the youthful characteristics to craft this refreshing and stylish Prosecco.
