Sourced from the higher elevations of our Estate grown vineyard above 600m (Orange appellation) “Climbing”
wines exhibit intense flavours courtesy of lower yielding vines set on ancient soils, extremely cool nights and
carefully nurtured viticulture. The Climbing label is inspired by the higher elevation
vines that give such a unique character and was drawn from an 1880’s Dive Circus poster with the dashing
Henry scaling the heights inspired by the local extinct volcano peak, Mount Canobolas.
2016 CLIMBING SHIRAZ
BLEND: 100% Shiraz
REGION: Orange, NSW
HARVEST: Last week of February 2016
WINEMAKING: Crafted from our best Shiraz parcels coming from vineyard
blocks 51, 23, 19 & 16. All fruit was de-stemmed, the must then
cold soaked on skins for 4 days prior to ferment. The must was
then allowed to warm and inoculated with a Shiraz specific yeast
for fermentation. Post ferment, the parcels drained and gently
pressed off skins, then transferred directly to oak for 12 months
maturation, a combination of 225 and 300L French oak barrels.
Post maturation, barrels were racked and blended, lightly fined
and then filtered for bottling.

APPEARANCE: Deep red with purple edges
AROMA: Black currant, ripe plum fruits, with lifted spice notes
PALATE: Full bodied with generous ripe fruit, savoury black pepper spice
notes combine with the oak derived chocolate and vanillin notes.
Palate is softly textured with chewy tannins adding structure and
length to the wine
CELLAR: Up to 7 years.
SERVE WITH: Great with roast or barbecued red meats, mature hard cheeses.
