This Tribute chardonnay shows a perfume of white florals, just ripe stone fruit, lemon pith, fennel frond and lanolin. The palate is taut but elegant with great fruit depth and concentration. Savoury oak elements provide a pedestal from upon which the fruit shines.
A rounded creamy acidity gives this wine great persistence.
One of the best, close to perfect vintages in the last 10 years. January was warm with good rainfall setting up the vines with an ideal amount of soil moisture. This was followed by a month of cool and dry conditions, perfect for slow and steady fruit ripening. The cooler conditions and even ripening resulted in producing fine elegant wines.
VITICULTURE + WINEMAKING
Fruit was selected from a single block of premium Gin Gin clone Chardonnay, hand harvested and whole bunch pressed. Cloudy juice was racked to French oak puncheons. Wild alcoholic and malolactic fermentation followed by maturation in a combination
of 66% second fill and 34% old oak for a period of 9 months.
Chargrilled artichokes, beans, olive puree, basil pesto, peas, Yarra Valley goats curd.
