Varietal black cherry and cranberry with underlying toasty oak and supple tannins.
Spiced duck breast, wild mushroom fricassee polenta, seared salmon with miso or a selection of soft cheese.
The fruit was selected from premium Adelaide Hills vineyards, cool fermented on skins then pressed into stainless steel to optimize colour and flavour. The wine underwent malolactic fermentation and matured on light French oak to add length and spice, a small amount of shiraz and merlot were blended to enhance the cherry characteristic and add roundness on the back palate.
