Coombe Chardonnay is one of our flagship wines. Pale straw to white gold in colour, this Chardonnay has a generously perfumed nose. Yellow peach, lemon curds with a touch of crème brulee and cinnamon spice. The palate has fruit concentration, a fresh almond nut savoury note, mid palate texture and a medium-long elegant finish.
One of the best, close to perfect vintages in the last 10 years. January was warm with good rainfall setting up the vines with an ideal amount of soil moisture. This was followed by a month of cool and dry conditions, perfect for slow and steady fruit ripening. The cooler conditions and even ripening resulted in producing fine elegant wines.
VITICULTURE + WINEMAKING
A selection of our Gin Gin clone Chardonnay grown on the flat and lower lying ‘B’ block was harvested and pressed lightly. Partially settled juice was transferred to 500 L French oak puncheons. The wine was matured in a combination of 33% one year old and 67%
two- and three-year-old oak for a period of 9 months.
Melba gin cured trout, beetroot, spanner crab rillette, sea herbs, Yarra Valley smoked salmon caviar.
