Small parcels were placed into open fermenters, then basket pressed into a careful selection of new and seasoned French Oak barrels for eighteen months, before being bottled un-fined and unfiltered. Purposeful yet considered use of traditional winemaking techniques alongside modern practices contribute to the ‘old world’ feel of the wine.
